strat targets, economy, and bomber pilots

1. Where can I find a map of all the strategic targets for the different campaign maps (e.g. factories, refineries, etc.)?

2. When I bomb strat targets, sometimes I see that I have reduced the economy to 135% or something ridiculous like that. Could someone explain how the economy system works?
