Wine is just an emulation and it will never support full Windows functionality in API. If your computer is powerful enough I would offer virtual machine. If not -- dual system loader.
Re: Ubuntu & CS3 products As vadin says.. I know there are issues at least with PS of late through WINE. Do you NEED the latest PS? IIRC PS6 works thru wine. Gimp not an option for you? Are also a slew of other gfx capable progs avail via update service in ubuntu (tick 'Show all' programs) but dualboot is easy to setup as well
